Pancakes with vanilla cream are a delicious dessert or snack for cold and dark days. Something for a stormy Sunday afternoon, with no weather to go out at all. The ideal moment to conjure up something tasty in the kitchen with the obligatory cup of coffee.
How to make pancakes with vanilla cream?
This recipe is really super easy. I always start with the pancake batter. Then I make the vanilla cream. And while it thickens, I bake the pancakes. Finally, everything goes in the oven and we make coffee.
The pancake batter
This is a very simple pancake batter. I always use one part flour to two parts milk. Then I add the sugar, an egg and 50 grams of melted butter. Mix everything well. Let the batter rest for a while while we start with the vanilla cream.
The vanilla cream
The vanilla cream is also really easy to make. But you have to be patient, and give it time to thicken slowly.
First of all, we soak the raisins in a little milk. Later in this article we give some alternative tips on how to soak the raisins.
Separate the white and the yolk of the eggs. We only need the egg yolk for this cream. Add the egg yolks, sugar and salt to the milk.
Cut the vanilla pod in half and scrape out the inside. Mix this with the milk. Later in this article we also describe an alternative, in case you don’t have this at home.
Heat the milk slowly and stir everything regularly. Add the flour in the meantime. Do this over low heat, so that the milk does not boil.
Finally also add the soaked raisins.
Baking the pancakes
While we let the cream thicken, we can bake the pancakes. Stir the vanilla cream regularly in the meantime.
Normally the amount of batter is enough for six pancakes. I bake the pancakes over medium-high heat, so that they don’t get too crispy. This because we have to roll them up later.
Since they have to go in the oven afterwards, they don’t have to stay in the pan for too long. Golden yellow to light brown is the color we want to reach for our pancakes.
Finishing the pancakes with vanilla cream in the oven
Now it is time to get the oven dish. But first we turn on the oven to 180-200°C. It will be preheated by the time we put the oven dish in.
We first coat the oven dish with a nice layer of vanilla cream.
Then we spread each pancake with two tablespoons of cream. After that, we roll them up and put them one by one in the oven dish.
If we have any cream left, we can finally spread it over the pancakes.
As a last step we put the oven dish with pancakes with vanilla cream in the oven for approximately 10 minutes. In the meantime, make coffee and set the table. Let it be bad weather outside, we cocoon inside with something tasty.

Some variations for on these pancakes with vanilla cream
Alternatives for soaking the raisins
In the classic recipe, we use a little bit of the milk to soak the raisins. But you can add more flavor if you soak the raisins in some orange juice. This is one of my favorite methods to soak raisins. Some other recipes where I do that are for example:
But we can also be a little bit more naughty. And add some alcohol to the soaking raisins. You can choose Batida for example, to stay in the color of milk. Another possibility is a dash of rum. Rum and raisins also go very well together. But if you don’t have that at home, you can also add a dash of brandy or even Ouzo.
Alternatives for using the vanilla pod
If you spontaneously decide to make these pancakes with vanilla cream on a stormy Sunday afternoon, chances are you don’t have a vanilla pod at home. But don’t panic, as we can switch to Plan B: replace the vanilla pod with two packets of vanilla sugar.
And we even have a Plan C: vanilla flavor. One or two drops of vanilla flavor can suffice. Be careful with this though: before you know it, the flavor tastes too strong.
