    Are you not in the mood for baking and looking for a super easy and delicious alternative for a dessert? Then this Mascarpone with spiced biscuit and coffee is the perfect alternative! Ready in just 15 minutes, no baking, just mixing and cooling down in the refrigerator.

    I found the inspiration on the Belgian site of solo, a well known brand of cooking butter and similar utensils for the kitchen. You can also post recipes there, and it is not forbidden to do recipes without butter 🙂

    a super-easy and delicious dessert with only four ingredients: Mascarpone with ground Biscoff and coffee. the perfect alternative for baking!

    Ingredients
     
     

    • 500 gram Mascarpone
    • 250 gram spiced biscuits
    • 200 ml coffee
    • 200 ml cream
    • 4 tablespoons brown sugar

    Instructions
     

    • Ground the Biscoff spiced biscuits.
    • Dissolve the sugar in the coffee.
    • Mix the Mascarpone, coffee and ground Biscoff.
    • Whip the cream until completely stiff. Then carefully mix it with the mascarpone-Biscoff mixture.
    • Transfer the mixture into the dessert cups.
    • Put it for a few hours in the refrigerator to cool down,

    Mascarpone is a great invention for desserts. Of course there is the well known Tiramisu. I don't have it on surprising recipes yet, but one day for sure my very special surprising Tiramisu will be a post here. But I have some other great desserts with mascarpone:

    • Mascarpone mousse with red fruit
    • Fluffy lemon curd mousse

    I also like to use mascarpone for breakfast pancakes. If you are interested, please try these mascarpone pancakes with red fruit compote.

    If you have time and energy to bake, there is also a lot of great alternatives on surprising recipes. Some of my favourites are:
