How to make pasta verde with avocado and bacon?
This simple summer lunch is not only delicious and nutritious but also very easy to prepare. Which is especially important on an overly hot summer day.
Preparations
We begin by chopping the vegetables. With that, already the majority of the work is done.
First, the cucumber is up. We start by washing it thoroughly. Then we halve it and remove the end of the half we will be using. Next, we quarter it lengthwise. Finally, we cut these quarters into small pieces.
We crush the garlic cloves with the flat side of a kitchen knife. Then we remove the skin and chop the garlic cloves into small pieces.
Next we halve the cherry tomatoes and the Kalamata olives.
Now we halve the avocado lengthwise, and remove the hard pit. We also remove the tough outer skin, leaving only the creamy flesh of two avocado halves. We cut these also in bite-sized pieces.
Mix the olive oil, balsamic vinegar, and white wine vinegar into a dressing in a small bowl.
Now combine all the ingredients for the green salad in a large bowl. This includes the wild salad mix, Kalamata olives, cherry tomatoes, cucumber, and avocado. Then pour the dressing over the salad and mix everything well.
Warm Salad Components
The pasta (e.g., butterfly pasta) and bacon make up the warm components of this Pasta Verde.
First and foremost, bring water to a boil for the pasta. Butterfly pasta takes approximately twelve minutes to cook. Once done, drain the pasta and arrange it in deep plates.
