Oily fish is healthy. And smoked mackerel is an ideal alternative for a quick lunch or midweek meal. This yellow rice with smoked mackerel and egg, peas and leek is quick to prepare, super tasty and healthy. How to make yellow rice with smoked mackerel?
This simple rice dish is very easy to make and tastes delicious. We will go through the different steps one by one here.
Cooking rice and eggs
Usually we start by cleaning the vegetables, the so.called “mise en place”. But in this case we start with the rice and eggs. While they cook, we can prepare the vegetables.
You always cook rice in a ratio of one to two. One amount of rice and two amounts of water. We bring that water to a boil. Once it boils, we add the rice. Then let this simmer for about ten minutes over medium heat. The rice will have absorbed all the water and will be cooked. Keep an eye on it so that the rice does not burn. Now set the rice aside until we add it to the vegetables later.
We boil the eggs hard. This can be done in the egg cooker or in a cooking pot. Once they are ready, we rinse the eggs under cold water. This cools them down quickly and makes them easy to peel. Then cut the eggs into four pieces and set them aside.
Preparing and cooking the vegetables
While the eggs and rice are cooking, we can focus on the vegetables and herbs.

We remove the skin from the garlic and shallots. Then we cut them into small pieces.
We also remove the skin from the fresh ginger. This gives a bitter taste and disturbs the balance on the plate. Then we also cut the fresh ginger into small pieces. Alternatively, you can also grate the fresh ginger.
And then there is the leek. If necessary, we first clean it so that no more sand sticks to it. Then we halve the leek lengthwise. Then we cut the two half leeks into thin half-moon rings.
Cooking the vegetables
We now take a large pan and heat a tablespoon of oil in it. Then we add the garlic, shallots, and ginger. Fry this for about a minute. In the meantime, add the mustard, cumin seeds, curry, and turmeric. Stir everything regularly.
Then add the leek and frozen peas. Stir everything well and let it simmer over medium heat for about five minutes.
Preparing the smoked mackerel
While the leek and peas are simmering, we can prepare the smoked mackerel. You can simply remove and discard the skin. Then we cut the smoked mackerel in half lengthwise. Next, we cut the half mackerel into bite-sized pieces of one to two centimeters.
The final steps and serving the dish
When the seasoned leek is cooked, add the rice. Mix everything well and give the ingredients time to integrate. The rice will now also turn a nice yellow color. Finish the vegetable dish with a tablespoon of lemon juice and mix everything together again.
Now you can scoop the yellow-green rice with leek and peas into deep plates. Then arrange the smoked mackerel and hard-boiled eggs on your rice dish. And already your yellow rice with smoked mackerel and egg is ready. Moreover, it is not only delicious, but also beautiful to look at. Because the eyes eat too, of course.
