Ingredients

  • 1 cucumber
  • 150 grams shrimp
  • 1 shallot
  • 1 tablespoon mayonnaise optionally with sriracha
  • 1 tablespoon dill freshly chopped
  • 4 cherry tomatoes
  • 4 sprigs parsley
  • pepper

Instructions

  • Mix the mayonnaise with some sriracha sauce. It is very spicy, so be careful and taste until the taste is right. It may be pretty spicy.
  • Chop the shallot very finely.
  • Chop a few sprigs of fresh dill finely.
  • Mix the shrimp with the shallot, dill and mayonnaise.
  • Remove the ends of the cucumber and then halve it lengthwise. Then cut the two half cucumbers in half.
  • Remove the seeds with a spoon, so that canoes are formed.
  • Arrange the shrimp in the cucumber boat.
  • Finish with cherry tomatoes, a sprig of parsley and pepper.

How to make shrimp in a cucumber boat

This summer starter is a cold preparation that comes together in no time - refreshing and delicious on a warm summer day.

First, we begin with a bit of chopping. Take a few sprigs of fresh dill and strip the tips off the stems. Then, finely chop the dill.

Next, we prepare the shallot. Remove the ends and the tough outer skin. Halve the shallot and then finely dice both halves.

Now it's time for the cucumber. Wash it and cut off the ends. Slice the cucumber in half lengthwise, then halve those pieces again. You now have four cucumber parts. Remove the seeds in the center of each part to create a boat shape, but leave some seeds intact toward the middle, so that the shrimp don't fall out..

The mayonnaise should have a spicy touch. Mix some sriracha sauce into the mayonnaise to taste - just enough to add some spice without overpowering. If you'd like, you can also add paprika powder or cayenne pepper for extra depth.

Now, mix the shrimp with the finely chopped shallot and dill. Bind everything together with a tablespoon of the sriracha mayonnaise.

Arrange the shrimp mixture in the cucumber boats. For the finishing touch, garnish with halved cherry tomatoes, a sprig of parsley, and a sprinkle of pepper. Serve the cucumber boats on plates with a bed of arugula salad for a fresh and vibrant presentation.
