How to make carrot orange ginger soup?
Just like with most soups, chopping the ingredients is the most work. And in this case, we also need to juice an orange. But since everything will go into the blender later, it's enough to roughly chop the vegetables and herbs.
Moreover, with soup, precise measurements usually aren't necessary. The same goes here. So this soup is also perfect for using up leftovers or emphasizing your own favorite flavors.
Chopping the vegetables
As mentioned, chopping the vegetables is the most work. But since we're chopping roughly, this can be done quickly.
We start with the carrots. Peel them and remove the ends. Then halve the carrots and cut the halves into half-moons.
Ginger is also an important flavor carrier in this soup. First, remove the bitter skin from the ginger root. Then cut the ginger into medium-sized pieces.
Next, rinse the celery stalk under cold water to remove any sand or dirt. Then cut it into pieces.
Now it's the onion's turn. Remove the ends and the tough outer skin. Halve the onion and cut it into medium-sized pieces.
Optionally, you can also add a yellow chili pepper to this carrot-orange soup with ginger. If so, remove the stem and halve the chili pepper lengthwise. Remove the seeds and cut the pepper into pieces.
A few garlic cloves will also add extra flavor to this soup. Crush them with the flat side of a knife. Then remove the tough skin and cut the cloves into medium-sized pieces.
Now that the vegetables are chopped, all that's left is to juice the orange. Halve the orange and squeeze out the juice. Optionally, you can also add a second orange to the soup-it's up to you.
Cooking the carrot orange ginger soup
Heat some oil in a soup pot. First, sauté the onion, garlic, ginger, and optional chili pepper for a few minutes until the aromas are released.
Then add the carrots and celery to the pot, along with the vegetable broth. Let it simmer gently for about twenty minutes until all the ingredients are tender.
While the soup cooks, you can finely chop the green leaves of the parsley or cilantro.
Now it's time to bring out the immersion blender and purée the soup. The result should be a smooth, thick, creamy soup.
We've already added the carrots and ginger. Now it's time to add the orange juice to the soup. This gives it a sunny, sweet accent. Taste and season further with pepper and salt as needed.
Now you can ladle the carrot-orange soup with ginger into bowls. For the final touch, add a drizzle of sour cream or coconut milk. You can also use Greek yogurt if you prefer. Finally, sprinkle the soup with a few parsley or cilantro leaves.
More than just delicious: a boost to your health!
This carrot orange ginger soup isn't just a treat for your taste buds-it's also a powerhouse for your body. Carrots are packed with beta-carotene (great for your eyes and immune system), while oranges are a vitamin C bomb that boosts your energy and strengthens your resistance. The ginger doesn't just add a zesty kick; it also has anti-inflammatory properties and aids digestion.
Additionally, the red onion and garlic are loaded with antioxidants, and the vegetable broth provides a hydrating and nutritious base.
So, a bowl of this soup isn't just comforting-it's also a healthy, nourishing meal that pampers and strengthens you from the inside out.
