Preparations
Finely chop the chili pepper and cloves of garlic. Remove the seeds of the chili pepper.
Cut the zucchini in half lengthwise and then cut into half moons.Do the same with the chorizo sausage.
Bake the chorizo and the zucchini
Fry the pieces of chorizo sausage in the pot where we will make the soup later.
Once the chorizo starts to release its moisture, add the red chili pepper and garlic.
After 3-4 minutes, add the zucchini. Cook for a few more minutes until the zucchini are al dente.
Set the chorizo sausage and zucchini aside.
Make the lentil soup
Pour the vegetable stock and the diced tomatoes into the hot pot with the chorizo remnants. Bring this to a boil.
Add the red lentils. They should now cook for about 15 minutes until the lentils are tender.
Shortly before the end add the chorizo and the zucchini.
After a few minutes everything will be warm and the flavors are well integrated.
Serve in deep plates and garnish with a few parsley leaves.
