Instructions
Wash the radishes to remove all the sand. Separate the greens and the roots of the tubers. then quarter the tubers.
Peel and dice the potatoes into cubes.
Bring some water to a boil, and blanch the radish greens for a few minutes.
Remove the radish green from the water and let it drain. In the meantime, steam the potato cubes for about ten minutes until they are cooked.
Finely chop the green leaves of the radish.
Melt a tablespoon of butter in the pan and fry the quartered radish tubers for about five minutes.
Then fry the sausage in the pan.
Mash the potato cubes. Then add the finely chopped radish leaves and an egg. Mix everything together well and season with salt and pepper.
