Green pea soup with mint is a tasty vegetarian alternative for the classical version with bacon. A typical green winter soup with a fresh taste of summer.

Dice the onions and the garlic. Peel the potatoes and cut them into small cubes.
Bake the onions and the garlic for a few minutes in some olive oil. Then add the potato cubes. Bake them also for a few minutes while stirring.
Add the green peas and the vegetable broth. Bring it to a boil and let it simmer for approximately 10 minutes. Until the potatoes are cooked.
Meanwhile, chop the mint.
Add the mint to the broth and mix everything with the blender.
Serve immediately and garnish with some Greek yoghurt and a leave of mint.
