White-orange mashed cauliflower gratin can be eaten as a side dish or as a light lunch. Just delicious with the melted cheddar and the crunchy bacon strips.
Clean the garlic cloves and the cauliflower and chop them roughly. Cook them for 15-20 minutes.
Meanwhile bake the bacon until crispy. Cut it into strips. Chop the chives. Preheat the oven at 180°C.
When tender, mash the cauliflower and add the buttermilk, butter, pepper, salt. Also add most of the chives. Keep some of them apart for garnishing at the end.
Transfer the mashed cauliflower mix into oven dishes. Cover with a lot of cheddar and the bacon strips.
Let it bake for 5 minutes in the oven, until the cheddar has melted.
