Instructions
Chop the zucchini, the red onion and the garlic into pieces.
Put them in a bowl for the microwave. Season with pepper, salt and oregano.
"Cook" them for 4 minutes in the microwave on 1000 Watt.
Meanwhile bring the water with the chicken broth to a boil.
Put the vegetables, the sundried tomatoes, the cheddar cheese and the broth in the blender.
Mix for a few minutes in the blender until you have a thick creamy soup.
You may garnish with some additional cheddar cheese and parsley.
