    • 1 fennel
    • 1 apple
    • 1 mini Romana salad
    • 2 tablespoons pumpkin seeds

    for the dressing

    • 1 orange
    • 2 tablespoons olive oil
    • 1 teaspoon honey
    • 1 teaspoon mustard

    Instructions
     

    Roasting the pumpkin seeds

    • Heat a pan and roast the pumpkin seeds for a few minutes. Then set them aside.

    Making the dressing

    • Juice the orange.
    • Mix the orange juice with the olive oil, mustard, and honey.

    Preparing the fennel salad with fruit and crunch

    • Wash the fennel well and remove the base of the bulb. Then halve the fennel and remove the hard part of the bulb. Cut the fennel into thin rings and chop them into smaller pieces.
    • Also remove the bulb from the Romana salad. Then cut the salad into quarters lengthwise. Finally, cut these into strips.
    • Cut the apple into quarters and then remove the peel and core. Then cut the flesh into small pieces.
    • Mix the fennel with the salad and the apple in a large bowl.
    • Now mix the marinade into the fruity fennel salad.
    • When serving, garnish the fennel salad with the crispy roasted pumpkin seeds.

    How to make a fennel salad with fruit and crunch?

    This fennel salad with fruit and crunch makes a delightful side dish for a summery barbecue or a tasty meal. For example, it pairs wonderfully with Salsiccia sausages, which are also fennel-based. First, we puff the pumpkin seeds and prepare the dressing. Then we finely chop the main ingredients and mix everything into a delicious salad.

    Puffing the pumpkin seeds

    Toast the pumpkin seeds in a warm pan for a few minutes. They'll puff and take on a crunchy, nutty flavor. Don't worry - it's not like popcorn that flies in all directions.

    Set the puffed pumpkin seeds aside and continue with the rest of the recipe.

    Preparing the orange dressing

    Squeeze the orange. Mix the fresh orange juice with olive oil, mustard, and honey into a smooth dressing. Set this aside for mixing into the salad later.

    Making the fennel salad with fruit and crunch

    Slicing the fennel is probably the trickiest step in the whole preparation - but it's actually not such a big issue. First, rinse the fennel thoroughly under cold running water to remove any sand or residue. Then slice off the hard bottom part and the top ends of the stalks, as they tend to be tough. Halve the fennel and, if necessary, remove the hard triangular core. Slice the fennel into thin rings and chop them into smaller pieces. You can also use a mandolin if you prefer finer cuts.

    Next, tackle the mini Romaine lettuce. Remove the tough part here as well. Then slice the lettuce lengthwise into four quarters and finally into strips.

    Lastly, quarter the apple. Peel it and remove the core. Slice the quarters lengthwise on both sides, then dice them into small cubes.

    Now mix the fennel with the Romaine lettuce and apple. Add the dressing to the salad and combine everything well.

    Serve the marinated fennel salad and finish it off with the puffed pumpkin seeds.
