
These tenderloin mini steaks with rice and pineapple are a healthy midweek meal that is quick to prepare. Tenderloin mini steaks are thin slices of pork, also known as minute steaks or finettes. We will go into more detail about this later in the article. But let's start with the recipe.
How to prepare tenderloin mini steaks with rice and pineapple?
These tenderloin mini steaks with rice and pineapple are a typical healthy and quick midweek dish. After a few preparations, it is relatively quick to cook. The fact that you only need to briefly pan-fry the minute steaks is certainly crucial for this.
The preparations
First and foremost, it is important to take the minute steaks out of the refrigerator in time. This allows them to come to room temperature. This way, the shock during frying is less, and they do not curl up. In the meantime, you can marinate them with pepper and paprika powder. If you like it a bit saltier, you can also add a pinch of salt.
Then it's time to finely chop the vegetables. We start with the yellow and green bell peppers. I always cut off the bottom and the top first. Then you can easily remove the inner seeds. After that, you cut them into strips or cubes, depending on your own taste.
We also finely chop the onion and garlic. First, we remove the outer skin. Then we halve the onion and cut it into small pieces. We first crush the garlic with a knife. Then we remove the skin and cut it into small pieces as well.
Finally, we cut the chives into small pieces. Although you can also save this for later, you still have time.
Cooking the rice
We bring water to a boil for the rice. I always use loose rice. The ratio of water to rice is always 2 to 1. So, twice as much water as rice.
When the water boils, we add the rice. After about 10 minutes, the water will be gone, and the rice will be cooked. Then we remove the pot from the heat and mix in the pineapple chunks.
Stir-frying the minute steaks and the vegetables
While the rice is cooking, we can continue with the wok. First, we will stir-fry the minute steaks.
For this, we heat oil in the wok. When it is hot, we briefly fry the minute steaks in it. This goes very quickly. After about a minute, the underside will be cooked, and you can turn them over.
Set the minute steaks aside after frying. Repeat this until you have fried all the tenderloin mini steaks.
Then it's time for the vegetables. First, we fry the onion and garlic in the still-hot wok. After a few minutes, we add the yellow and green bell peppers. Let them stew for a few more minutes.
Then we deglaze the vegetables with the white wine. Let the alcohol evaporate and add the curry powder in the meantime. Then add the vegetable broth. Now let the everything simmer and cook for 10 minutes.
Then we mix in the rice with pineapple. Let this warm through again over low heat. Also, add the minute steaks and cover the wok to keep the heat in.
Meanwhile, prepare deep plates to serve the tenderloin mini steaks with rice and pineapple. We finish this off with some finely chopped chives.
What are tenderloin mini steaks?
Tenderloin mini steaks are thin, lean slices of pork tenderloin. They are literally ready in a flash. You only need to briefly fry them on both sides in the pan. About a minute on each side, and they are done. Hence also the name minute steaks. Sometimes they are also called "finettes". This sounds like fine and small and has a French touch. A way to give this pork meat a more sexy and up to date image. They are also perfect for the wok, grill, and barbecue.
Pork doesn't always have the best image: fatty, unhealthy, common, and boring. But these slices, about half a centimeter thick, aim to give it a trendier and healthier image that better fits the times. Tenderloin is also the best part of a pig, and is very comparable to white meat like boneless chicken breast.
