Zucchini and tuna are a surprisingly delicious combination. In this casserole, a savory cake with zucchini and tuna, the two main ingredients are combined together with a simple dough made from eggs, mayonnaise, and flour. It's easy to make, and after forty minutes, you'll have a delightful savory cake from your oven.
How to make savory cake with zucchini and tuna
This savory cake with zucchini and tuna actually consists of three layers: a layer of zucchini, followed by tuna, and finally another layer of zucchini. Of course, this depends a bit on the size of your casserole dish. Alternatively, you can also mix everything together and transfer it to the casserole dish.
But let's start by preparing the ingredients.
Preparing the zucchini mix
We start with the zucchini, of course. We rinse them to remove any sand residues. Next, we trim the ends and halve the zucchini lengthwise. Now we cut the half zucchini into horizontal layers of approximately 1 centimeter. Vertically, we slice the zucchini into various strips. Finally, we cut pieces of about two to three centimeters in width, according to your taste. We sprinkle the courgette strips with some salt and let them rest.
We peel the onion and then cut it into small pieces. Next, we finely chop the fresh dill.
Now, let's mix the flour and baking powder in a large bowl. Add the fresh eggs and mayonnaise, and whisk them together into a liquid batter. Season with pepper and other herbs to taste.
Next, we add the zucchini strips to the batter. Mix everything well, and finally, incorporate the onion and dill. Part one of our savory cake batter is now ready.
The tuna mixture
In a second bowl, we now prepare the tuna mixture.
To do this, we open the cans of tuna and drain the liquid. Then, add the tuna to the dish.
Next, we add the hard-boiled eggs. We mash them with a fork and mix them into the tuna.
Finally, we have the grated cheese. Emmental is always a good choice for this. Mix the cheese with the tuna and eggs. Now, part two of our cake is ready.
Baking the savory cake with zucchini and tuna
Now it's time to preheat the oven to 180°C.
While it's heating up, let's prepare the casserole dish. Grease it with a little olive oil.
Next, spread approximately half of the zucchini mixture over the bottom of the casserole dish. Then, distribute the tuna mixture as a second layer over the zucchini mix. Finally, add the remaining zucchini to complete the dish.
Once the oven is hot, bake the dish for 40 minutes. It will come out lightly browned and wonderfully fragrant. After a brief cooling period, you can serve it piping hot. Any leftovers can be easily reheated in the microwave the next day. Enjoy with a piece of baguette or a salad!
Variations on savory cake with zucchini and tuna
This is truly a recipe where you can bring in a lot of your own creativity.
Fresh Tuna
If you don't like canned tuna, you can also buy fresh tuna for the noble version. In this case, cut the tuna into small pieces. Since everything bakes in the oven for 40 minutes, you don't need to pre-cook the tuna. It will cook automatically in the oven.
Spicy Tuna
Tuna also pairs well with spicy herbs. Think of a spicy tuna sandwich. So, if you like a tingle in your mouth, feel free to add some spicy herbs. Of course, be mindful not to overdo it.
One option is a red chili pepper. Halve it lengthwise and remove the seeds for less heat. Then, finely chop it and mix it with the tuna.
Another option is a teaspoon of red curry paste. You can mix it with the tuna or blend it with mayonnaise. Also some drips of Tabasco pair wonderful with tuna.
Mayonnaise
I always make mayonnaise myself. You can find a foolproof mayonnaise recipe in the article "Mahonaise, the origin of mayonnaise." As a bonus, you'll learn all about the history of mayonnaise.
Earlier in this article, we mentioned that mayonnaise is perfect for mixing in spicier herbs. Red curry paste, chili flakes, pepper… But also wasabi and ginger are excellent options. Everyone is familiar with Japanese sushi, served with tuna, a dollop of green wasabi paste, and pickled ginger. Learn more about it in the article on wasabi-ginger mayonnaise.
Other Vegetables
In addition to zucchini, you can also incorporate other vegetables into this savory cake with zucchini and tuna. Think of spinach, a red bell pepper, or mushrooms. The possibilities are endless, so feel free to share your creative ideas in the comments!
