    Ingredients
     
     

    • 300 ml vegetable stock
    • 25 ml cooking cream
    • 1 apple
    • 2 cm ginger root
    • 15 gram starch
    • 25 ml cold water
    • 1 teaspoon curry powder

    Instructions
     

    • Peel the ginger root and cut it into small pieces.
    • Do the same with the apple: peel it and cut it into small pieces.
    • Dissolve the starch in cold water.
    • Heat the vegetable stock with the cream until it boils.
    • Then add the dissolved starch, ginger and apple.
    • Let the soup simmer for another 5 to 10 minutes.
    • Puree the soup with a hand blender.
    • Serve the soup shooter in small glasses.

    How to make a healthy apple ginger soup shooter?

    For a start, we need to finely peel and chop both the ginger root and the apple. As we will mix everything as a final step, you don't need to overdo this. Just take into account that larger pieces need more time to cook.

    Meanwhile, we can heat the vegetable stock with the cream until it boils. Just keep an eye on it, to make sure that the soup base doesn't boil over. This is a mess you really want to avoid.

    Next, we dissolve the potato starch in some cold water. Once the soup base is boiling, we can add it to the vegetable stock with cream. Next we also add the pieces of apple and ginger. Just like the curry powder. Now the soup can simmer and cook for 5 to 10 minutes. Reduce the heat so that it doesn't boil over.

    Finally, we can puree the soup with the immersion blender. Then serve them in small glasses or cups. Best with a foot, an ear or something similar to protect your fingers from the heat.

    This apple ginger soup shooter has the same base as the beetroot soup shooter. So you may want to use more vegetable stock, and then make two different soup shooters out of it. Or you may come up with completely new ideas! Why not!
