    Ingredients
     
     

    • 1 liter vegetable stock
    • 250 ml cooking cream
    • 300 gram beetroot
    • 50 gram starch
    • 70 ml cold water
    • salt
    • pepper

    Instructions
     

    • Bring the vegetable stock with the cream to a boil.
    • Mix the starch with the cold water. Then add it to the vegetable stock.
    • Meanwhile, peel the beetroot and cut it into small cubes.
    • Add the beetroot pieces to the broth. Let the soup simmer for 10 minutes, until the beetroot is cooked.
    • Puree the soup with a hand blender and serve in nice small glasses or cups.

    How to prepare a red beetroot soup shouter?

    This beetroot soup shooter is really very easy to make. Moreover, you can also prepare it well in advance. All you have to do is heat it up and foam it up before serving.

    We start by boiling the broth and cream. Just pay some attention when it starts boiling. With the cream, like with milk, there is always a risk of boiling over.

    Meanwhile, we mix the starch with the cold water. We do this separately to avoid clumping once we add it to the broth.

    We also peel the beetroot and then cut it into small pieces that cook quickly. Afterwards we will puree the soup with the immersion blender. Beetroot contains a lot of dye. So watch out for unwanted red stains on your clothes. Also immediately clean your knife and cutting board, so that the red dye does not set.

    Once the broth is boiling, we can add both the starch and the beetroot pieces. Now the soup can simmer on a low fire for about ten minutes. You will notice that the beet immediately starts to transfer its coloring to the soup.

    After about ten minutes the beetroot will be ready and we can puree the soup with an immersion blender. When mixing, the necessary foam will also be created with which we can then finish the soup.

    If you make the soup in advance, all you have to do is heat it up and foam it with a mixer before serving.

    Then serve the beetroot soup in small cups or glasses. Since it is hot, it is recommended to use glasses with a foot or an ear. So you can hold them without burning your fingers.

    What exactly is beetroot?

    The beetroot is a brother of the well-known sugar beet. They both belong to the same beet genus (beta vulgaris). The plant itself grows up to 80 cm high, but it is of course the tubers that we know as beetroot.

    But in terms of health, a beetroot is for sure healthier than a sugar beet. It contains very few calories and fats, but all the more healthy minerals. The red color is caused by natural antioxidants. Instead of taking supplements, it is better to regularly put beetroot on your menu.

    Beetroot also has a very good reputation among athletes. It would dilate the blood vessels. As a result, more blood, and therefore oxygen, can be transported to the muscles. And that promotes endurance.

    Beetroot is also one of the basic ingredients for Borscht, the famous Eastern European beetroot soup. It is usually served as a meal soup. But you can make a lot of other healty and tasty dishes with it.
