
Are you in need of inspiration for a quick vegetarian lunch or light evening meal? Preferably with an Italian touch, but still slightly different? Then this pasta with sweet paprika sauce is definitely worth a try. Ready in half an hour, tasty and healthy. And it also looks very nice on your plate. Instead of sweet paprika you can also use regular red paprika. We will explain the difference between the two later on in this article.
How to make this pasta with sweet paprika sauce?
This pasta with sweet paprika sauce is ready really quickly. In half an hour you have conjured this up on your plate. Moreover, it also looks very nice and is very healthy.
The sweet paprika sauce
The preparations
First of all, we need to prepare the vegetables. And we're lucky this time. Because the sauce has to go through the immersion blender later, we can limit ourselves to coarse cutting. That saves already quite some work.
We halve the red pointed pepper lengthwise. Then we remove the seeds and the white parts. After this we halve the two halves again lengthwise. Finally, we cut off pieces of about two centimeters.
We follow almost the same procedure for the red chili pepper: halve lengthwise, remove the seeds and then cut into pieces.
We first crush the garlic cloves with a knife. Then we can easily remove the skin. Then we cut it into four or six, depending on the size. And we are already done with that.
Finally, we clean the two spring onions. We then cut the white and green separately. We will use the white part for the sauce. The green for the finish at the end.
Making the pointed red pepper sauce
We heat some olive oil in a pan. Once it is hot, we add the pointed pepper, the garlic cloves, the red chili pepper, the white of the spring onions and the sunflower seeds. We allow the ingredients to fry for five minutes in the pan on medium heat.
Then we add the tomato puree, the white wine vinegar and the water to the fried vegetables. Let it simmer for another two to three minutes, until everything is well integrated. Add some salt if necessary.
In the meantime we can prepare for mixing the sauce in the immersion blender. For that we first put two tablespoons of olive oil in the mixing bowl. Then we also pour or scoop the sweet paprika sauce from the pan into the mixing bowl. Time now to puree the sauce with the mixer.
Serving the pasta with sweet paprika sauce
While you are making the sauce, the pasta will also be cooked ready. So the timing fits well together. Once you have drained the pasta, divide it over the deep plates.
Then you spoon the beautiful deep red sauce of the sweet pointed pepper over the pasta. Finally finish the plates with grated Parmesan. And of course the green parts of the spring onions.
You will have a tasty and healthy Italian vegetarian pasta recipe on your plate in only half an hour. Now it's time to enjoy it in peace. The dish washing is for later. Or you can delegate that part.
About sweet paprika
Let us first talk about the naming. Because there are different words for the same vegetable: sweet paprika, pointed pepper, sweet pointed pepper, ... It is all the same vegetable. And basically the adjectives describe differences with the more classical paprika (bell pepper). It is long stretched and therefore pointed. And another difference is that our pointed red paprika is much sweeter than its bell brother.
Finally we have a third difference: the peel is much thinner. And that is also important. Because many people have digestion problems with the classical bell pepper. It throws up because the thick peel is difficult to digest. That is the reason why many people peel their bell peppers. But they can also use the sweet paprika as an alternative that digests better.
