
The warm weather forces us to eat light and healthy dishes. You need to absorb enough fluids. Fresh vegetables are of course an excellent source to stay hydrated. And as a surplus they contain lots of vitamins. If you want, you can eat a piece of bread with this summer salmon salad. But because you are less active, you also need fewer calories. So the salad in itself is probably sufficient to be satisfied. And maybe a glass of white wine or rosé.
About summer salmon salad
This summer salad with tender salmon is ready in fifteen minutes. Perfect for a quick and light meal. You just have some cutting and chopping during the preparations. You can finely chop the tomatoes, cucumber, onion and arugula to your own taste. Then mix everything together in a bowl. Finally, season them with a spice to taste. You can of course also use other vegetables in your salad. Check your fridge or use yesterday's leftovers!
The tender salmon is the protein source of this meal. And perhaps the hardest part at all is removing the skin from the salmon steak. So that will work for everyone. Then cut the salmon into small pieces of about one centimeter. Because we only cook the salmon in the oven for a very short time. Then mix the salmon with the finely chopped onion and two tablespoons of (homemade) mayonnaise.
The salmon only needs to cook in the oven for three minutes. This way it stays nicely tender and juicy. The salmon is then just cooked enough to be tasty and easily digestible. And just tender enough without getting dry. It goes perfectly with the juicy salad.
And that is it! Nothing else is needed, except... a cool glass of wine. Because late in the evening you can enjoy this together with a glass of rosé or white wine. The ideal end to a hot summer day.
