The recipe for these easy Flemish gingerbread muffins is almost the same as the one for the Flemish gingerbread I made some time ago. Only this time I used whole wheat flour. And I garnished them with sugar pearls. The major change is of course that I used muffin molds instead of a classical cake or bread mold. This affects the baking time also of course.

Ingredients
  

  • 250 gram whole wheat flour
  • 8 gram baking powder
  • 250 gram brown sugar
  • 100 ml water
  • 2 eggs
  • 2 tablespoons gingerbread spices
  • 2 tablespoons honey
  • sugar pearls

Instructions
 

  • Preheat the oven at 180°C.
  • Grease the muffin molds with butter.
  • Mix all the ingredients in a bowl until they make a consistent dough.
  • Pour the dough in the muffin molds. Sprinkle some sugar pearls on top of them.
  • Bake them for 20-25 minutes in the oven until they are ready. Check this with a toothpick. When no dough sticks to the toothpick they are ready.
  • Let the muffins cool down for a while and remove them then from the molds.
  • Serve for breakfast or with a cup of coffee or tea in the afternoon.
