
Pizza without dough? Absolutely! This potato pizza is a gluten-free, crispy alternative to classic pizza-using thin slices of potato as the base. Top it with pizza sauce, mushrooms, cheese, and an egg, and you've got a delicious, light dish that's perfect for a cozy TV night or a casual gathering. Plus, it's a clever way to use up leftovers.
In this article, I'll share the recipe and my best tips for getting the pizza out of the pan in one piece. Let's get started!
How to make a potato pizza?
The star of this Italian classic is, of course, the potatoes that form the pizza base. So, that's where we'll start. While the pizza base bakes, we can prepare the toppings.
In this case, we won't peel the potatoes. Instead, we'll wash them thoroughly and pat them dry. You'll need about two to three large potatoes for one pizza base.
Next, we'll use a mandoline slicer. Be careful with this tool-it can easily cut your fingers. Slice the potatoes into thin, round discs using the mandoline.
Now, we'll grease a pan with butter or olive oil. I like to use a low-sided frying pan for this. After all, we'll need to get the pizza out of the pan later.
Then, arrange the potato slices in the pan, overlapping them slightly and pressing them down firmly. This will help them form a nice, even pizza base.
Once the pizza base is formed, we can bake it. Place the pan over medium-high heat and let the base cook for about ten to fifteen minutes, until the potato base is tender and the bottom is crispy. If needed, place a plate on top of the potato slices to press them down evenly.

Preparing the pizza toppings
While the base is cooking, you can prepare the pizza toppings, which is no big issue at all.
The prep work involves:
- Slicing half an onion into rings.
- Slicing the mushrooms.
- Halving the cherry tomatoes.
- Additionally, have the pizza sauce, grated cheese, Parmesan cheese, and the egg ready.
Adding the toppings and finishing the pizza
Once the base is ready, it's time to add the toppings. Start by spreading the pizza sauce over the potato base. Then, add some grated cheese, followed by the mushrooms, onion rings, cherry tomatoes, and a fried egg in the center.
Place a lid on the pan and let the pizza cook for another five minutes.
Now, remove the pizza from the pan and enjoy this delicious gluten-free potato pizza alternative. Optionally, you can also sprinkle a few arugula leaves on top.
